Risotto with Smoked Sea Salt Butter

Ingredients:

For 2 

  • 225g arborio risotto rice

  • 1 small onion diced

  • 1 tablespoon Posh Cow smoked sea salt

  • 845ml-1 litre of stock (veg or chicken)

  • Handful of wild garlic, spinach or herbs of your choice

  • Sprinkle of grated parmesan

Method:

  1. Sautee your diced onion in 1/3 tablespoon (or a free hand dollop) of Posh Cow smoked sea salt on a low heat

  2. Add your rice and cook for 2 mins

  3. Add a small glug of stock, and stir until absorbed

  4. Repeat until you have combined all of your stock and your rice is creamy and tender

  5. Stir in the remainder of your Posh Cow smoked sea salt (or a free hand dollop)

  6. Stir in your wild garlic, herbs or spinach

  7. Sprinkle parmesan and mix in

  8. Season well with salt & pepper
